Marshmallows and jello combine into one fruity sweet concoction… jello roll ups! This easy 3 ingredient dessert is fun for kids to help with, and even more fun to unroll.
Why this recipe works
A fun twist on homemade fruit roll ups, these colorful marshmallow and jello pinwheels can be made with whatever flavor of jello you want. We’ve chosen strawberry and berry blue to go along with our 4th of July party treats! Just think of all the flavor and color combinations you could make.
Jello roll ups are a great recipe to have the kids join in on making and are perfect for birthday parties and playdates as well. They’re sticky and squishy, and taste so good.

JELLO – The best part of this recipe is the flavor possibilities with gelatin. You can use whatever flavor you want to make these jello roll-ups. Sugar-free Jell-O works just as well as regular and can certainly be substituted. The marshmallows will absorb whichever color you decide to go with.
How to Make Jello Roll Ups

- Grease an 8×8 pan with vegetable oil or spray. You will need two 8×8 pans, one for each color jello.
- In a medium-sized bowl add 1/2 cup of boiling water and 3 ounces of one Jell-O mix. Whisk until sugar is fully dissolved. You may need to add this to the microwave for another minute to keep the water temperature up for the sugar to dissolve.
- Once the sugar is dissolved fully, add 1-1/2 cup of mini marshmallows. Whisk to cover with Jell-O completely and microwave for 30 seconds. Whisk until the marshmallows are completely dissolved.
- Pour into the 8×8 pan and chill in the refrigerator uncovered for a minimum of 1 hour.
- Repeat all of the above steps for your second color Jell-O.
- Use a butter knife to loosen and remove from the pan as a full sheet. Roll the sheet tightly on itself in parchment paper. Allow to sit for about 30 minutes to stick to itself. Remove the parchment paper and cut into 1 inch strips.
